Nutrition science has come a long way in recent years. When I was a child, my mom put a butter-substitute spread known as margarine on our table because the health authorities of the time said margarine was healthier than butter. Boy, were they wrong! Margarine was made from hydrogenated vegetable oil, which contained high amounts of trans-fat. Trans-fat is now known to be THE most unhealthy form of fat one can consume. It increases LDL, the dangerous form of cholesterol, and decreases heart-protective HDL. Happily, modern butter-substitutes are not nearly as bad for us.
